Delicious DaVita - Chicken Wings

Tex-Mex Wings
Recipe adapted by Steve Schroeder
Portions: 12   Serving size: 2 wings
Ingredients
  • One 8-ounce can mild diced green chili peppers
  • 1/2 cup barbecue sauce (choose lowest sodium brand)
  • 3/4 cup honey
  • 2 teaspoons chili powder
  • 1/3 teaspoon ground cumin
  • 24 chicken wing drummettes
  • 1 whole lime, squeezed for juice
Preparation
  1. Preheat oven to 400° F.
  2. Combine all ingredients except chicken in a large bowl and mix ingredients.
  3. Place chicken in a baking dish and pour mix over the wing.
  4. Bake for 20 -25 minutes. Check for doneness.
  5. Serve hot or place in a covered warming dish or crock pot on low setting until ready to serve.
Helpful hints
  • Buy fresh wing drummettes at the grocery. A 1-1/4 pound package contains approximately 12 drummettes.  If unavailable, ask your butcher to cut whole chicken wings into drummette size.
  • Boneless chicken pieces may be used in this recipe. Check for doneness after 20 minutes
  • Choose the lowest sodium brand of green chili peppers and barbeque sauce. Sodium varies greatly between brands.

Lemonade Wings

Portions: 12   Serving size: 2 wings
Ingredients
  • 24 chicken wing drummettes
  • 4 tablespoons canola oil
  • 4 tablespoons butter or margarine
  • ½ medium sized yellow onion chopped
  • 4 teaspoons fresh rosemary, chopped
  • 8 -10 fresh lemons squeezed
  • 2 teaspoons black pepper
Preparation
  1. Add all ingredients except chicken wings in mixing bowl. Stir ingredients.
  2. Preheat oven to 400° F. 
  3. Place chicken wings in a baking dish.
  4. Pour mixture over chicken and bake for 20-25 minutes. Test for doneness.
  5. Serve hot or place in a covered warming dish or crock pot until ready to serve.

Teriyaki Wings

Portions: 12   Serving size: 2 wings
Ingredients
  • 24 chicken wing drummettes
  • 1/2 cup water
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons reduced-sodium soy sauce
  • 2-1/2 tablespoons reduced-sodium teriyaki sauce
  • 1/4 cup brown sugar
  • 1/2 teaspoon garlic powder
  • 1/3 cup balsamic vinegar
  • 1/2 teaspoon ginger
Preparation
  1. Place chicken wings in a large zip-lock bag.
  2. Add all ingredients and shake to mix and coat. Refrigerate overnight to marinate.
  3. Preheat oven to 400° F.
  4. Place wing drummettes in a baking dish and bake for 20-25 minutes. Check for doneness.
  5. Serve hot or place in a covered warming dish or crock pot on low setting until ready to serve.
Helpful hints
  • Regular soy sauce and teriyaki sauce are extremely high in sodium. Reduced sodium soy sauce and teriyaki sauce contain less sodium, but are still considered high in sodium content. Be cautious to use only the amount required in the recipe.
  • Buy fresh wing drummettes at the grocery. A 1-1/4 pound package contains 12 drummettes.  If unavailable, ask your butcher to cut whole chicken wings into drummette size.

Buffalo Wings

Portions: 12  Serving size: 2 wings
Ingredients
  • 8 tablespoons unsalted butter or margarine
  • 1/3 cup Tabasco® hot pepper sauce or hot sauce of your choice
  • 24 chicken wing drummettes
Preparation
  1. Preheat oven to 400° F.
  2. Melt butter or margarine, add desired hot sauce and mix in a bowl.
  3. Place chicken wings in a baking dish.
  4. Bake wings for 15 minutes. Take out of oven and pour sauce over wings. Place back in oven and cook for 5-7 minutes. Check for doneness.
  5. Serve hot or place in a covered warming dish or crock pot, until ready to serve.
Helpful hints
  • Buy fresh wing drummettes at the grocery. A 1-1/4 pound package contains 12 drummettes. 
  • Boneless chicken pieces may be used in this recipe. Check for doneness after 20 minutes.
  • Hot sauce brands vary greatly in sodium. Choose a brand with less than 140 mg sodium per teaspoon.
